Pumpkin Pound Cake (Favorite of Laura)
1. Combine:
- 1 ¾ cup flour
- 1 ½ tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp nutmeg
- ½ tsp allspice
2. In another bowl, beat:
- 2 eggs
- ¾ cup brown sugar
- 1/3 cup granulated sugar
- ½ cup canola oil
- 1 ¼ cup pumpkin puree
3. Add dry ingredients and
mix. Add nuts and pour into a loaf pan.
4. Bake at 325 for 60-65 minutes.
5. For frosting, mix together ¼
cup butter, 2 TB pumpkin puree, ½ tsp cinnamon, ½ tsp vanilla, 3 cups powdered
sugar, and 2 tsp half and half or milk.
6. Sprinkle ¼ cup pecans or
walnuts and frosting the cooled cake.
