Pumpkin Pound Cake (Favorite of Laura)

1. Combine:

  • 1 ¾ cup flour
  • 1 ½ tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp nutmeg
  • ½ tsp allspice

2. In another bowl, beat:

  • 2 eggs
  • ¾ cup brown sugar
  • 1/3 cup granulated sugar
  • ½ cup canola oil
  • 1 ¼ cup pumpkin puree

3. Add dry ingredients and mix.  Add nuts and pour into a loaf pan.

4. Bake at 325 for 60-65 minutes.

5. For frosting, mix together ¼ cup butter, 2 TB pumpkin puree, ½ tsp cinnamon, ½ tsp vanilla, 3 cups powdered sugar, and 2 tsp half and half or milk.

6. Sprinkle ¼ cup pecans or walnuts and frosting the cooled cake.
